We’ve all been there at some point or another. The amount of food that you have is in limbo – not enough to justify a grocery trip, but just enough to get creative with. This recipe only has 2-3 ingredients and is vegetarian, with the option to easily make it vegan. It’s perfect for using up those leftover veggies you have, and you can basically add anything to it you want to intensify the flavor!
1 large or 2 small zucchini
1 large onion
Shredded cheddar cheese (or vegan substitute)
- Slice zucchini into thin rounds. Slice onion, thinly.
- Layer zucchini and onion in casserole dish with 1/4 cup water. Steam until done, stirring occasionally.
- Drain off water. Add salt & pepper (or embellish with your own spice combination), then sprinkle with cheese/vegan cheese. The heat from the steamed veggies will melt the cheese on its own, so no need to cook any longer.
